I went off to Scaret Monastery to fish these - the top pool in the Chapel Gardens (Cathedral wing) is perfect; quiet in an instance with my actual drop rate around 72-75% (with the rest being Bristle Whisker Catfish).

You can use these fish for a cooking recipe bought in booty bay. The recipe requires 175 cooking skill. Its a nice and easy way to level your cooking and fishing at the same time.

I fished these on Janeiro's Point in STV at about 23.5,70 with a really good drop rate. Some raw bristle whisker catfish also dropped.

Wowhead is reporting a 65% drop rate for this fish in Thousand Needles, when most guides and players say Desolace is best. Can anyone verify this?

It seems like the droprate increases with fishing skill. Can someone verify this?
And can someone tell me what level you have to be to get around 80% droprate, instead of all the tattered cloth, driftwood, old boots, rocks and the all so famous weeds.

Desolace worked really well for me (at the "pond" at 60.4, 20.7), about 75% of the casts resulted in a Raw Mithril Head Trout. At about 220 fishing skill, you won't be pulling out any grey items anymore.

Dustwallow seems to be very good for fishing these up too. Hit the first pond I came to (north of the tower close to town, sorry I don't have coords), and 90% of what I fished up was the trout, the rest was the Bristle Whisker. Hope this helps.

I like to level up my fishing and cooking together, and use the fish as my primary food as well, for recovering health. At level 25, it was time to replace my food, and Mithril Head Trout was the way to go. Except that the zones where Trout is caught is generally mid-30s level!

After reading the comments here, I decided to try Arathi Highlands. Standing at one of the pools outside of Stromgarde Keep, I was able to fish without worrying about mobs attacking me. My fishing skill was high enough I didn't catch any junk. In the time I spent there, I got the following:

93 Raw Mithril Head Trout
60 Raw Bristle Whisker Catfish
1 Greater Healing Potion (That was... random... heheh)

So that's roughly a 60% catch rate on Trout, if I'm calculating correctly. There may be higher catch rates elsewhere, but at level 25 aggro might be an issue. In Arathi Highlands the most dangerous part is the road to and from Stromgarde Keep, but as an alliance I was never attacked, and made two trips on consecutive days to do my fishing.

As of Cata release the Arathi Highlands spots only yielded Mud Snapper and Catfish. Fished for over an hour without 1 Mithril Head.

I was getting a lot in Western Plaguelands by that dock in Andorhal (41,76)(Was facing the dock), as I shaman I had Water Walk and was sitting in the middle of the stream casting my line at the dock, had about a 76% drop rate, rest of it was catfish, my fishing skill is only 210

I caught exactly 100 fish and this is what I got:

Raw Mithril Head Trout (76)
Raw Bristle Whisker Catfish (23)
19 Pound Catfish (1)

Just repeating what was said, outside Brackenwall Village in Dustwallow Marsh, in the pond to the South is a good spot with a drop rate no lower than the other places imo. I guess it would be around 65% or more. You will catch a majority of Raw Mithril Head Trouts and the rest will be Raw Bristle Whisker Catfish.

Taking Jazane's advice, I fished right off of the Andorhal dock (Death Knight using Path of Frost to stand in the river) and out of 100 casts I got;

62 Raw Mithril Head Trout
36 Raw Bristle Whisker Catfish
a 19 Pound Catfish and 1 Greater Healing Potion.

Fishing skill was 351 when I started, I also got 24 pts in fishing as well while gathering the Raw Mithril Head Trout. Thanks for the advice. =)

Swam to Shadowprey from Zoram'gar Strand as a naked, petless hunter. It took two deaths to the bloody Makrura on the way, but when I got to Shadowprey, I stuck around to throw 100 lines to see the droprate for the trout. As follow, I cought

One of the best locations to fish for Raw Mithril Head Trout is the inner bodies of water in Dustwallow Marsh. 2/3 droprate. If you want to level cooking to 225 and skill up fishing at the same time, go fishing for trout and cook them afterwards.

The sweet waters of Dustwallow Marsh is indeed a good place to fish. For the duration of one lure I got 21 Trouts and 12 Bristle Whisker Catfish. There's a lake just north of Theramore, the main road passes through it so it's a safe spot (for Alliance). Also it's close to Gadgetzan, so you can level cooking to 225 and then it's only a short travel to do the cooking quest there. The cooking recipe for the trouts can be bought in IF and for the catfish in SW.

Just went to Dustwallow. It took me approximately 10 mins to fish up 3 Catfish and 12 Trouts. It really is a great place to fish these.

Droprate was 63% just outside Brackenwall Willage in Dustwallow Marsh.
Data while ranking from 150-225 (346 catches):

Raw Mithril Head Trout: 63% (218 catches)
Raw Bristle Whisker Catfish: 36.1% (125 catches)

Duskwallow inland water is definitely the easy answer to get these at a reasonably low level. If you want to fish some up at an even lower level (mid to high 20s), you can fish the pools inside the cave at Splithoof Crag in Thousand Needles. This is the cave that at least Horde players need to go into to get the Cloven Hoof to complete The Sacred Flame. Catch rate is greater than 50% for mithril head trout in the pool right in front of where you get the Cloven Hoof and mobs are only in the 25-27 range.

So, after reading these really old comments, I ran my level 27 gnome mage out to Dustwallow Marsh and tried the first little pond on the road headed out of Theramore.
With an effective fishing skill of 230(level capped at 225 for now and have a +5 heavy fishing rod) and 100 casts I came out with...
60 Raw Mithril Headed Trout
38 Raw Bristle Whisker Catfish
1 19 Pound Catfish(which you can apparently equip in your off hand :D )
1 Mana Potion
0 Fish that got away :)

Spring 2022. I took my squishy lvl 25 priest to Dustwallow Marsh, made my way to 59,36 and hopped on the railing of the wood bridge. The very first body of water once you're outside of Theramore Isle was as far as I needed to go (be sure to avoid the spider that wanders on the left as you approach the bridge if you're way below level for the zone!) I started out at fishing skill 172, and used 3 Aquadynamic Fish Lens on my Blump Family Fishing Pole to avoid any fish getting away. I didn't need to use another after the third lure. After approximately 45 minutes I maxed out at 225.

My net haul:

146 Raw Mithril Head Trout
66 Raw Bristle Whisker Catfish
1 Mana Potion
1 17 Pound Catfish
